Superb Satay Salad

Salads are the perfect way to eat the rainbow!

Entertaining on a weeknight? Doing a little weekend preparation can make all the difference. Simply pour your salad straight from the jar to a serving platter, your guests will be superbly impressed!

Satay the Remedy way!

Ingredients

Protein

  • 500g protein of your choice, I used chicken thigh fillets but you could also use beef, pork, tofu, fish, eggs, turkey, cottage cheese…

  • 1/2 cup Superb Seasoning Mix

  • 1/3 cup EVOO

Carb

  • 1 cup of brown rice, cook according to packet instructions

  • Other carb options- pasta, quinoa, potatoes, sweet potato, beans, lentils, sourdough…

Salad

  • cucumber

  • grated carrot

  • purple cabbage

  • red capsicum

  • yellow capsicum

  • spanish onion

  • mint leaves

  • avocado

  • rocket… what ever your heart desires 

Satay dressing

  • 1/4 cup smooth peanut butter

  • 3 tbsp Tamari

  • 1 tbsp maple syrup

  • 1 tbsp apple cider vinegar

  • 1/4 tsp sriracha (chilli sauce)

  • 1/2 lime juice

  • warm water if the dressing is tad thick. 


Method

STEP 1

Firstly start with preparing your carb of choice. Then set aside.

STEP 2

To prep my chicken, I tossed the thigh fillets in Superb Seasoning Mix, coat with EVOO, airfry for 12 minutes on 190 degrees. Or cook in a frypan from 6 minutes each side on a medium heat.

STEP 3

While the chicken is cooking, wash and prepare all your salad ingredients.

STEP 4

In a medium size jug add all the satay dressing ingredients. If you find the dressing is too thick you can always add a little warm water to thin the dressing out.

STEP 5

Time to jar up! I like to pop the dressing on the bottom so the salad doesn’t lose its freshness. So dressing first, followed by your carb, protein and salad. Seal and refrigerate until needed.
