Beefy Noodz

Nothing says stir fry more than tender beef and a delicious glazed sauce.

Stir fry sauce without the fuss… honey, soy and freshly grated ginger!

Ingredients

  • 1 kg thinly sliced tenderloin steak, either scotch fillet, rump, porterhouse, sirloin, or ribeye

  • 1/4 cup Superb Seasoning Mix

  • 1/4 cup tamari (fermented soy sauce)

  • 1/3 cup honey

  • 1 tablespoon fresh ginger, grated

  • 3 tablespoons EVOO

  • 270g organic soba noodles

  • 2 x medium size zucchini, cut into large bite size pieces 

  • 150g sugar snap peas

  • 1 x spanish onion or brown onion, sliced into long strips

  • 3 sprigs of shallots, washed and chopped to garnish

  • 2 tablespoons sesame seeds, lightly toasted 

  • Small bunch of parsley to garnish



Method


STEP 1 

Lightly toast the sesame seeds in a small fry pan on a medium heat. Make sure to keep a close eye on this stage as the seeds can burn easily.

STEP 2 

In a small jug combine the tamari, honey, and grated ginger, set aside.

STEP 3 

Wash and chop the sugar snap peas, zucchini, shallots, parsley and spanish onion. 

STEP 4 

Add water to a large pot, bring to the boil, cook the noodles for 4 minutes, drain. Tip- I like to add a drizzle of oil over the noodles after they are cooked to prevent them from sticking together.

STEP 5 

Slice the beef into thin strips. Tip- by slicing the beef against the grain you will get a more tender meat. 

STEP 6 

Heat a large wok or fry pan with EVOO to a medium to high heat. By making sure the pan has a hot heat you will stop the meat from becoming tough and chewy. Cook for 1-2 minutes. Another important tip is to never over crowd the pan, this may take some time to get through this process though the pay off of eating a delicious melt in your mouth meal will be so worth the effort. Once all the beef is cooked, set aside and coat in the Superb Seasoning Mix.

STEP 7 

In the same pan, drop the heat to a medium temperature, cook the onion and then add the zucchini, return the beef, add the sauce, cook for a few minutes stirring consistently. I like to steam the sugar snap peas separately so they still have some crunch and that beautiful bright vibrant colour.

STEP 8 

Time to plate up- I used a large serving dish adding the cooked noodles as the base, then layered up with the beef and veggies. Garnish with the toasted sesame seeds, shallots and parsley. Tuck in
