These cruchy lettuce cups filled with perfectly superb seasoned pork, fresh herbs and tasty peanuts are fast, flavourful and cost effective.

Ingredients —

Mince

  • 800g pork mince

  • 1/2 cup Superb Seasoning Mix

  • 1 tablespoon EVOO

Fresh ingredients

  • Small lettuce cups, the amount will vary depending on size

  • 1 cup Jasmine rice (optional)

  • 1/4 cup shallots, diced

  • 1/4 cup coriander, diced

  • 1/4 cup mint, diced

  • 1/4 cup peanuts, toasted

  • 1 chilli, diced

  • 1 lime, cut into wedges


Method

STEP 1

Rice- this is optional. If you’re super hungry and are needing to fill your cup (bardon the bun), this is a great way to add a carb. Cook according to packet instructions.

STEP 2

Wash and dry the lettuce cups. Wash and chop the shallots, coriander, mint and chilli. Lightly toast the peanuts. Cut the lime into wedges. Set aside.

STEP 3

In a large frypan, heat EVOO to a medium heat. Add the pork mince, break up the mince with a wooden spoon unil it is no longer pink. Add half the seasoning, stir then add the rest. You’ll notice this will help absorb all the juices in the pan, making the cups a little less messy to eat. Take the frypan off the heat, add the shallots, coriander and mint, stir. 

STEP 4

Time to cup up! After you have filled all your lettuce cups, garnish with peanuts, chilli and a squeeze of lime. 

Tip, for those you like a little sauce you can always add a drizzle of chilli, sriracha or hoisin sauce over the top.
