Tuscan Butter Beans, Sun-dried Tomatoes & Swiss Chard

Ingredients
2 tablespoons of the oil from the sun-dried tomatoes
1/2 leek, washed, cut in half and diced
1/2 cup sun-dried tomatoes, sliced into strips
1/4 cup Remedy Kitchen Superb Seasoning Mix
1/4 cup tomato paste
1/4 teaspoon black pepper
2 cups vegetable stock
1 tin coconut milk
1 bunch Swiss chard, washed, de-stemmed and cut into small pieces. You could also use kale or baby spinach.
2 X tins butter beans, well washed
Squeeze of lemon
Method
Heat a large, deep frypan to a medium heat, add the sun-dried tomato oil and the leeks, fry gently for 3-5 minutes. Then add the garlic, Superb Seasoning Mix, sun-dried tomatoes, tomato paste and pepper. This will become a thick paste. Cook for 1-2 minutes, consistently stirring, then add the coconut milk, vegetable stock and swiss chard. Stir well, cover and simmer for 5 minutes to soften the chard.
Lastly, add the butter beans, cover and simmer on a gentle heat for 15 minutes, stirring occasionally. Yep, it’s that simple!
To serve up I like to add a squeeze of lemon juice and some crusty sourdough.
