When Life Gives You Lemons

When life gives you lemons… you make overnight oats for a citrus celebration!

 

SERVINGS: 2 generous servings or 4 small

COOKING TIME: 40 Minutes, the night before

PREP TIME: 4 Minutes

TOTAL TIME: 44 Minutes


Ingredients

OVERNIGHT OATS

  • 1 cup Remedy Omega Porridge

  • 1 cup coconut yoghurt

  • 1 cup milk, I used almond

  • 1/4 cup lemon juice. This is optional, you can substitute with more milk

  • 1 teaspoon lemon zest

    PASSIONFRUIT CHIA PUDDING

  • 1 cup milk, I used almond

  • Pulp of 2 passionfruits

  • 1/4 cup chia seeds

  • 1 tablespoon maple syrup

    LEMON CURD

  • 45g lemon juice

  • 80g butter

  • 90g caster sugar

  • 2 eggs

    TOPPINGS

  • 2 tablespoons Raw Buckwheat

  • Optional extra lemon zest


Method

Step 1 Overnight Oats

Add the Oats, milk and yoghurt to a small container, mix, cover and refrigerate overnight.

Step 2 Passionfruit Chia Pudding

In a large mixing bowl add the milk, passion fruit pulp, chia seeds and maple syrup. Whisk well, then allow to sit for 60 seconds, whisk again and repeat before pouring either into a container or jars to set overnight.

Tip - whisking serval times will help avoid getting clumps or uneven texture to your pudding.

Step 3 Lemon Curd

In a small saucepan add the lemon juice, butter, sugar and eggs.

Cook over medium-low heat, whisking gently and constantly to prevent the eggs from curdling, until mixture starts to get thick and bubbles rise to the surface. This should take about 5 to 6 minutes. Pour into a glass jar and set in the fridge overnight.

Step 4, The next morning!

You can either prep 4 jars in advance or build your breakfast each day as you go. I like to add a little extra lemon zest and granola for a crunch. When life gets busy that’s when we need to take extra care of our health. Layer up however it tickles your fancy, sprinkle on your favourite toppings and voila!
