Oaty Blueberry Cheesecake

Not all jams are created equal. Fortunately, the supermarket seems to stocking more ethical products. If you’ve got 10 minutes Remedy would love to show just how easy, clean and delicious home made jam can be!

Who knew these clean nutritious ingredients could be turned into a head turning dish.

 

SERVINGS: 2 generous servings

COOKING TIME: 20 Minutes, the night before

PREP TIME: 10 Minutes

TOTAL TIME: 30 Minutes


Ingredients

OVERNIGHT OATS

  • 1/2 cup Remedy Omega Porridge or Milled Oat Porridge

  • 1/2 cup coconut yoghurt

  • 1/2 cup milk, I used almond

    BLUEBERRY CHIA JAM

  • 2 cups frozen blueberries

  • 2 tablespoon chia seeds

  • 1 tablespoon maple syrup

  • Juice of ½ a lemon

    BASE

  • 1 cup of granola, blitzed to a fine crumb

    TOPPINGS

  • ¾ cup fresh or frozen blueberries

  • ½ cup coconut yoghurt

  • 2 tablespoon blueberry jam


Method

Step 1 Overnight Oats

Add the oats, milk and yoghurt to a small container. Mix, cover and refrigerate overnight.

Step 2 Blueberry Chia Jam

In a small saucepan, gently cook the blueberries over medium heat for around 5 minutes until softened.
Transfer to a blender and lightly blitz to break down the skins.

Stir through the chia seeds, maple syrup, and lemon juice.
Pour into an airtight jar and refrigerate for a few hours until thickened.

Step 3 Granola Crumb

Add 1 cup of homemade granola to a blender and blitz until it forms a fine, biscuit-like crumb.

Short on time? There are plenty of clean, wholesome options at your local health food store.

Step 4, The next morning!

Time to layer up. Firstly, add the granola crumb to the base, followed by a generous layer of blueberry chia jam, then the overnight oats. Finally, to create that cheesecake feel, gently swirl some of the blueberry jam through the yoghurt.
Top with fresh blueberries and a light dusting of granola crumb for a little texture and crunch.

A simple, nourishing creation that feels just a little bit indulgent—perfect for slow mornings, entertaining or an afternoon treat.
