I’m so Waffles for Peaches

These waffles are made using Remedy Porridge as the batter.
That’s right, no flour. Just oats.

Life’s complicated enough… but your waffles toppings don’t have to be!

 

SERVINGS: 4 large waffles or 6 medium

COOKING TIME: 20 Minutes

PREP TIME: 10 Minutes

TOTAL TIME: 30 Minutes


Ingredients

Waffle Batter

  • 2 cups of either Omega or Milled Oat Porridge

  • 1.5 cups almond milk

  • 2 eggs

  • 3 tablespoons maple syrup

  • 3 tablespoons butter, or nuttlelex for a plant based option, melted.

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • ½ teaspoon salt

  • plus extra butter to grease the waffle press

Toppings

  • fresh peaches

  • 1 x punnet of fresh blackberries or frozen if not in season

  • ¼ cup slivered almonds, lightly toasted

  • ½ cup coconut yoghurt

  • honey to drizzle over

  • A sprinkle of fresh mint leaves



Method

Step 1,

Add Remedy porridge to a food processor and mill until you have a flour-like consistancy. Set aside. In a large bowl whisk together milk, eggs, maple syrup, melted butter, vanilla, baking powder and salt. Stir into the milled porridge until well combined. (The batter will be slightly runnier than traditional waffle batter, that’s normal.)

Step 2,

Heat and grease your waffle maker. Add ½–¾ cup of batter (depending on the size of your machine) and cook until golden and crisp.

Step 3,

Top generously with peaches, blackberries, toasted almonds, a dollop of coconut yoghurt and a drizzle or maple syrup. There are no rules when it comes to toppings, feel free to make them your own.

You’ll notice these waffles aren’t as fluffy as traditional ones…
But when you’re cutting out ultra-processed ingredients, you gain nourishment, flavour and a feel good satisfaction instead.

And yes, you absolutely can have seconds!
