Simply Mango-nificent Waffles!
This sweet tropical fruit definitely needs no introduction. In fact, it just wouldn’t feel like summer without them. Loved all around the world for their versatility and luscious sweet flavour, the mango is a dual hero of today’s dish… the other hero is of course, Remedy Kitchen Milled Oat Porridge!

Ingredients
WAFFLES
2 cups MOP porridge (or Omega Porridge), milled to a fine consistency
2 eggs
1 & 1/2 cups almond milk or milk of your choice
3 tablespoons maple syrup
3 tablespoons butter (or for a plant based option you can use nuttelex)
1 teaspoon baking powder
1 teaspoon vanilla extract
1/2 teaspoon salt
Spray oil
TOPPINGS
2 x mangoes, chopped into cubed bite size pieces
1/2 cup coconut yoghurt
Raspberry chia jam
4 tablespoons shredded coconut
Mint leaves to garnish
Method
Step 1
Add porridge to a food processor and mill until it is a flour like consistency, set aside.
In a large bowl add milk, eggs, maple syrup, butter, vanilla extract, baking powder and salt. Whisk until combined then add milled MOP porridge. Stir to combine. The batter should be quite a runny consistency, not thick like a traditional pancake batter.
Step 2
Pre-heat your waffle maker. Once heated, spray with oil to prevent batter from sticking. Add 1/2 cup of waffle batter, quantity may vary depending on the size of your waffle maker. Cook until your waffle is golden brown and crisp!
Step 3
Top with mangoes, coconut yoghurt, raspberry chia jam and shredded coconut. (Or whatever tickles your fancy!)
