A Matcha-Made in Heaven

Needing that afternoon pick-me-up? Matcha is abundant in antioxidants & amino acids, helps lower LDL, enhances energy levels, improves focus, while also increasing a sense of mental calmness. Matcha is a rockstar of the wellness world.

Ingredients

  • 12 dates, soaked in boiling water for 20 minutes

  • 1.5 cups Remedy Kitchen Milled Oat Porridge

  • 1 cup chocolate protein powder, I used Seed Cycling + Protein from The Seed Cycle, so I can support my hormones too

  • 1/2 cup coconut oil

  • 1/3 cup nut butter, I used almond

  • 1 teaspoon natural peppermint extract

  • 1/2 teaspoon matcha, I used ceremonial grade

    Coatings

  • 1/4 cup crushed pistachios, the finer the better

  • 1/2 teaspoon matcha

  • 100g Pana Dark Mint Chocolate, melted (I used plant based to keep my recipe vegan)


Method

Matcha Ball Batter

Soak the dates for 20 minutes in boiling water - then remove the outer skin and stone. Set aside.

Pour the Milled Oat Porridge into a food processor and mill to a fine consistency, add the protein powder, mill again. Add the rest of the ingredients; dates, melted coconut oil, nut butter, peppermint extract and matcha. Blitz until you have a smooth but sticky consistency. If the mixture feels a little dry you can gradually add more coconut oil until you have the desired result. I personally like the mixture to be a little soft especially when using protein powder so it’s not dry when you bite into it. Take a generous tablespoon of the mixture and roll into balls.

Coatings:

  1. Add half a teaspoon of matcha powder to the crushed pistachios, mix then roll the ball to get a lovely vibrant mossy green outer layer, without an overpowering taste of matcha.

  2. Drizzle chocolate over the rolled ball to achieve a lovely decadent treat especially if you’re having a sweet craving! Set in the fridge.

  3. Add crushed pistachios over a drizzle of chocolate, for an impressive colourful looking truffle.

Feel free to get creative when it comes decorating the outer layer. I’m very passionate about using what you have in the pantry… from desiccated coconut, crushed walnuts, crushed almonds, sesame seeds, crushed pumpkin seeds or a dusting of raw cocoa powder. You simply can’t go wrong!

Place in an air tight container, store in the fridge for up to a week… if they last that long!
