Oaty Jam Cups

Treats that are made with 100% natural ingredients… now that’s worth devouring!

Add a small indentation in the centre of your cups and fill with Jam!

COOKING TIME: 15 Minutes. This time includes making the Raspberry Chia Jam, but you can always use store bought jam to save some time!

Ingredients

Oaty Base

  • 200g Remedy Milled Oat Porridge (MOP)

  • 1/2 cup freeze dried raspberry pieces, plus extra for decorating

  • 5 tablespoons nut butter, I used almond

  • 4 tablespoons maple syrup

  • Pinch of salt

Raspberry Chia Jam

  • 2 cups fresh or frozen berries, I used raspberries

  • 2 tablespoons chia seeds

  • 1 tablespoon honey, this is optional

  • Juice from one lemon

Jam Method

Add two cups of berries to a small saucepan. Cook on a medium to high heat until the berries have broken down. Remove from heat.

Mix in the chia seeds, honey and lemon juice. Allow to cool before popping into a jar and refrigerate. Store in the fridge for up to one week.

Toppings

  • 180g good quality chocolate

  • 1/4 cup freeze dried raspberries

  • 1/4 cup finely chopped almonds


Method

Step 1

Use either a 12 x cupcake tin lined with patty cases or a silicon cup tray. In a large mixing bowl add the porridge, freeze dried raspberries, nut butter, maple syrup and salt. Stir well to combine all the ingredients. Test that the mixture holds together, if you feel it’s a little dry you can add more maple until it holds. Weigh the oat mix, then divide by 12. I had 400g, which when divided by 12 was 33 grams per cup. Press the mixture into the base of each, then with your thumb make a well in the middle for the jam.

Step 2

I’ve added my jam recipe if you’re wanting an ultra clean treat, or you can just use a store bought jam. Add the jam to the centre of the cup for a small pop of fruity flavour or if you’re wanting a little more you can add a thin layer over the whole oat cup. Pop in the fridge while you melt the chocolate and prep your toppings.

Step 3

Add a generous tablespoon of melted chocolate over each cup. If you see that the chocolate is setting quickly, I recommend decorating each one as you go so the toppings will set in the chocolate. Store in the fridge for a breakfast on the go, morning tea, or even a dessert.
