Rhubarb + Overnight Oats

I've always loved making a batch of stewed rhubarb, but while reading Ayurvedic Rituals by Chasca Summerville, I discovered the wonderfully warming addition of fresh ginger. I can confidently say it's absolutely tastebuds and tummy worthy.

SERVINGS: 2 Large serves or 4 small

COOKING TIME: 10 Minutes to prep the rhubarb the night before, then leave overnight

PREP TIME: 25 Minutes the night before for both the overnight oats and rhubarb compote

TOTAL TIME: 35 Minutes


Ingredients

OVERNIGHT OATS

  • 1 cup Milled Oat Porridge (or Omega Porridge)

  • 1 cup vanilla coconut yoghurt

  • 1 cup almond milk

ZESTY RHUBARB + GINGER COMPOTE

  • 1 teaspoon coconut oil

  • 1/8 teaspoon cardamom seeds (I used ground)

  • 1 × 2.5cm piece of fresh ginger, grated

  • ½ teaspoon lemon rind

  • 300g rhubarb stalks, roughly chopped

  • ½ teaspoon cinnamon

  • pinch of salt

  • juice of half a lemon

  • 1/3 cup filtered water

  • 1 tablespoon coconut sugar

TOPPINGS

  • 6 strawberries

  • ½ cup of granola

  • 2 tablespoons slivered almonds

  • and a little extra stewed rhubarb


Method

Step 1, the night before.

Mix together in an air tight container the oats, yoghurt and milk. Stir well and let the fridge work its magic overnight!  

This is also the perfect time to make the rhubarb compote, so the morning is easy pessy.

Heat the coconut oil in a medium saucepan. Add the cardamom and fry for 1 minute until fragrant, followed by the ginger and lemon rind, fry for a further 1 minute. Add the rhubarb, cinnamon, salt, lemon juice and water. Simmer, covered, for 5-10 minutes until it resembles a jam-like consistency. Lastly, stir through the coconut sugar and store in the fridge in an airtight container.


Step 2

Morning, time to dish up. Firstly, wash and slice up your strawberries. Layer the rhubarb, overnight oats, strawberries and almonds.

Most times I do all my food creations and photography during the day so dishes like this get covered over and are ready and waiting for me the next day… but when it came to this dish I just had to devour it instantly! Hands down worth the little extra effort the day before.
